Professor of Practice and Director of Public Health Nutrition
Professor Spence's research and outreach focuses on school and community-based interventions to promote healthy nutrition and physical activity environments for children and their families, youth leadership and advocacy development to improve school and community health environments, and improving food security for mothers, children, adolescents, young adults, and their families.
Professor Spence functioned as Jordan's undergraduate mentor from Sophomore to Senior year through the UT Promise program.

Karen Weatherall

Owner of Tranquil Eating Associates, Former Senior Lecturer and Dietetic Internship Director
Karen Weatherall is a registered dietitian nutritionist (RDN) and medical nutrition therapist with over forty years of counseling experience. She specializes in helping clients with behavior changes which produce improved health and well-being. Her counseling areas include weight management, eating disorders, diabetes management, and cardiovascular disease management.
Karen functioned as a mentor for Jordan between Junior and Senior years of her undergraduate studies.

Dr. Melissa Hansen-Petrik
PhD, RDN, LDN
Director, Future Education Model Graduate Program, Clinical Associate Professor
Professor Hansen-Petrik's research focuses on optimal educational approaches to training of future nutrition and dietetics professionals. She has worked in the University of Tennessee's Department of Nutrition for over 20 years, and has been an author of 17 different published works.
Professor Hansen-Petrik functions as the director of Jordan's Future Education Model Program.
