Jordan Lyons
Jordan's Story
Jordan is a lifelong Knoxville, Tennessee resident. Born into a small, tight-knit family hailing from the Mid-Atlantic and Appalachian South, Jordan’s personality is a spirited and passionate hodgepodge of both identities. She prides herself on her resilience, integrity, resourcefulness, and empathy both in and out of the workplace. In May 2024, she graduated with her Masters of Science in Clinical Nutrition and Dietetics from the University of Tennessee-Knoxville. In July 2024, Jordan passed her registration exam and officially holds the title of Registered-Dietitian Nutritionist.
Jordan’s professional portfolio development is marked by serving diverse populations, improving her knowledge and application of evidence-based practices, and being an advocate for her patients. During the onset of the COVID-19 pandemic, Jordan decided to support her East Tennessee community through the unique challenges that arose by working at East Tennessee Human Resources Agency’s Meals on Wheels program. Providing nutrition education and aid allowed her clients to feel more in control of their health and well-being, and Jordan loved being a guide to stability and self-sufficiency. This experience is what solidified her desire to be an RDN.
During her undergraduate years, Jordan’s other experiences included providing high-quality nutrition services and education to athletes at the University of Tennessee, and gaining practical foodservice experience in fine dining and multi-platform facility settings. In graduate school, her community nutrition experience expanded to include community farms, state extension services, and health department outreach programming. She also gained clinical experience in primary care for adults and pediatrics, acute care, oncology, pediatric gastroenterology, and long-term critical illness recovery specialties.
In her last semester, Jordan expanded her education and counseling skills by completing her final university courses, finished her year-long placement at Cherokee Health Systems with maternal and pediatric populations, and completed hospital foodservice, pulmonary, and advanced oncology placements. In her (very limited) free time, she spends quality time with her rescue pit bull and rabbits, and participates in shooting sports with her family and friends.
